Ingredients
· 3-pound chuck roast
· 3 cloves garlic, thinly sliced
· 1 tablespoon oil
· 1 teaspoon flavored vinegar
· ½ teaspoon pepper
· ½ teaspoon rosemary
· 1 tablespoon butter
· ½ teaspoon thyme
· ¼ cup balsamic vinegar
· 1 cup beef broth
How To

  1. Cut slits in the roast and stuff garlic slices all over
  2. Take a bowl and add flavored vinegar, rosemary, pepper, thyme and rub the mixture over the roast
  3. Set your pot to Sauté mode and add oil, allow the oil to heat up
  4. Add roast and brown both sides (5 minutes each side)
  5. Take the roast out and keep it on the side
  6. Add butter, broth, balsamic vinegar and deglaze the pot
  7. Transfer the roast back and lock up the lid, cook on HIGH pressure for 40 minutes
  8. Perform a quick release
  9. Remove the lid and serve!
